Aroma: this brut rosé sparkling wine defines itself with a bouquet of forest fruits, cornelian cherries, and fine notes of ripe sour cherries.

Tasting notes: with a crisp and refreshing taste, Apriori Brut Merlot offers a silky texture and long finish.

Vinification: produced under Méthode Charmat, the base wine is fermented in large, pressurized stainless steel tanks. After the initial fermentation, the wine is transferred to other tanks along with yeast and sugar, which triggers a second fermentation to create the carbon dioxide that produces the bubbles in the wine. Then, the wine is left to age on the lees, or yeast sediment, in the tanks for several weeks, which adds complexity and flavour to the wine. It represents the same method to produce Prosecco or Asti Spumante.

Food pairing: this brut sparkling wine can be paired with charcuterie board with aged cheese & cured meats, grilled chicken or turkey with herbs, raspberry tart or dark chocolate with berries
