Tasting notes: this wine has a complex and persistent taste with a well-balanced sweetness and a natural acidity.

Vinification: produced under Méthode Charmat, the base wine is fermented in large, pressurized stainless steel tanks. After the initial fermentation, the wine is transferred to other tanks along with yeast and sugar, which triggers a second fermentation to create the carbon dioxide that produces the bubbles in the wine. Then, the wine is left to age on the lees, or yeast sediment, in the tanks for several weeks, which adds complexity and flavor to the wine. It represents the same method to produce Prosecco or Asti Spumante.

Food pairing: this sweet red sparkling wine complements well the creamy desserts, tiramisu, and chocolate cakes.
